Super yummy, only 2 points with Weight Watcher's and will satisfy your sweet tooth {mymichael loves them & typically eats them in pairs...kind of defeats the purpose, right?}

the first colorings of fall

crisp air
spices
smells
pumpkins
cozy fires
chilly football games
blue sky w/ red and orange leaves

the list could go on and on......
what do you love about fall???

puttanesca sauce w/ chicken & angel hair pasta

wow...that's a long name for a recipe!
6 ounces uncooked angel hair pasta
1 tsp. evoo
2 cups thinly sliced onion
1 tblsp. minced garlic
1/2 tsp. crushed red pepper
1/2 tsp. anchovy paste
1-1/2 cups chopped cooked chicken breast
1 {28-ounce} can crushed tomatoes, undrained
3 tblsp. chopped pitted kalamata olives
2 tblspn. chopped capers
1/4 tsp. freshly ground black pepper
5 tblsp. grated fresh parmesan cheese
1. cook pasta according to package directions, omitting salt and fat. drain.
2. while pasta is cooking, heat oil in large nonstick skillet over medium heat. add onion and cook 5 minutes. add garlic and red pepper; cook 30 seconds. add anchovy paste; cook 30 seconds. add chicken and next 4 ingredients to pan; bring to a boil. reduce heat, and simmer 8 minutes or until slightly thickened.
3. combine cooked pasta and puttanesca sauce in a large serving bowl. top with parmesan cheese.
YIELD 5 servings {serving size about 1 cup chicken mixture and 1 tblsn. cheese}
PER SERVING: weight watchers points 6 cal 305 fat 7.7g fib 5g

the recipe says it takes 18 minutes to cook. it took me a little longer b/c i didn't have my chicken already thawed, probably 30 minutes or so total. add a salad and we are ready to eat!

what's cookin' this week?

some meal ideas for this week are......

*Puttanesca Sauce w/ Chicken & Angel Hair Pasta {Weight Watchers Magazine}

*Spicy Stir-Fried Chicken & Spinach {Weight Watchers Magazine}

*Roast w/ Sweet Potatoes & Salad

*Beef Carnitas {Cooking Light Magazine}

the roast and beef carnitas are favorites in our house...the Puttanesca Chicken dish and Stir Fry dish will be new trys...we will see how they stand up. honestly, the Puttanesca dish can't be that bad, i mean it's got capers, onions, red pepper flakes and kalamata olives....anything with those would HAVE to be good!

the *real* ruby jewel



ruby jewel spencer was my great-grandmother on my dad's side of the family. she was spunky, always wore tons of costume jewelry {probably where i get that from}, had 20 shades of lipstick sitting on her bathroom counter at all times, had a warm home full of photos, always had something cooking {typically a HUGE pot of brown beans on the stove}, was married forever to her soul mate and loved spending time with her ever growing family. if she got a hold of your hand she would hold on until you nicely tried to pry your hand away to which she would then hug and kiss you. her and leslie traveled to all 50 states, except alaska and built a lake house that they called "spencer's dream". she had a very full life of laughter, love and family that i can only hope to experience.
