what's cookin' this week?

Here is what's on my menu this week....

Baked Fish w/ Couscous and Fresh Green Beans
Dorito Casserole

  1. Boursin Chicken (you're welcome!)

    Ingredients:
    1 lb chicken breasts, butterflied and pounded thin (about 1/4 inch or so...)
    1 box Boursin cheese (found in the specialty cheese case of your grocery store)
    olive oil
    salt and pepper

    Directions:

    Butterfly and pound chicken breasts thin. Heat olive oil in skillet over medium heat. Place approx. 1 tbsp of Boursin cheese in center of a chicken breast, fold in top and bottom of chicken breast, then roll (think egg roll). Season outside of rolled chicken breast with salt and pepper, then place in skillet seasoned side down (it is best if this is also the side with the seam). make sure to season the other side before flipping. these cook fast because they are so thin.

    we like to serve this with a little pasta and some oven roasted asparagus.

    **If you like the Boursin cheese (which you WILL), you'll want to buy another box of it to serve with bread. The best bread is at Target - it's the Artesian European loaf. (Also - Sam's has Boursin cheese - it comes in a 2 pack, and is about half the price of Target)**
