recipe {quiche lorraine}


1 frozen pie crust
3 eggs
1 cup sour cream {i use light or FF}
1 medium onion, chopped
1/4 cup bell pepper, chopped
1 cup spinach, chopped
1/4 cup bacon bits
1 cup mozzarella cheese
salt, pepper & garlic salt

1.  in a bowl, lightly beat 3 eggs.  stir in sour cream, salt, pepper & garlic salt {i don't remember how much of the seasonings...just make it look good...wing it}
2.  add chopped vegetables & cheese to egg mixture and combine.
3.  pour mixture into pie shell
4.  bake at 350 degrees for 40-45 minutes...until lightly golden brown on top.

this recipe is super easy and quick!  it took maybe 15 minutes to mix up, then you pop in the oven for it to bake.  i actually made it monday night, covered it with foil and put in the fridge for mymichael to eat tuesday night while i was rolling dice with the bunko girls.  it heats up great in the microwave or oven.  again, this is a super easy recipe to tailor to your likes...you could add chopped ham or sausage....mushrooms would be awesome or tomatoes.  the bones of it are basic and you can add to it as you please.
